  • Holo isn’t actually edible. Nothing is transferring onto the chocolate, it basically a mold that creates a pattern that lets the chocolate it’s self catch the light and create a holographic look. Hopefully that makes sense

  • 11:57 dear cristine, what is happening here is that the actual part of the sheet is not tramsfering the chocolate is taking the shape.. You know how light when goes through a prism it diffuses into a Rainbow. Its called diffusion.. White light is made up of 7 colors of the rainbow which hve different wavelengths.. Light travels at different speed in different materials eg. It travels faster in air than solids. So when light goes from one medium to another refraction hapoens. Refraction means bending of light when it travels from one medium to another..all colors of white light bend at a different color and thus it looks holo because from different angles different colors hits your eyes.. So when we shape the chocolate such that it reflects light in a way that it diffuses it will look holo as it will diffuse white light. 7th grade physics right there. You should look upoo refraction of light on youtube. I am just a 9th grader so not the best person but I do agree with ben..

  • The paper is like a lattice, Christine. You're pouring chocolate over the holes in the paper, and the chocolate is filling those holes. When you peel the paper off, the chocolate takes on a reverse of the texture of the paper. It's the texture of the paper that makes the pattern, like a stamp more than a foil, even if it feels like cellophane. You're spreading your chocolate polish onto a holo stamp, and peeling up a pattern rather than a film.

    • ​@Leila It doesn't need to be compound chocolate HOWEVER it will be much easier on you (especially if you are not that well versed in dessert) since compound chocolate doesn't need to be tempered

  • Compound chocolate is chocolate made with vegetable oil or margarine as opposed to coco butter. The binding molecules between the two are very different. So when compound chocolate is melted and set. It sets firm and hard. Where 'real' chocolate remains soft like a ganach (sp?) Or something like that. I'm sure been is about to explain this next part but I paused the video to write this. Lol so I will add 'real' chocolate can be tempered to reshaped those molecules allowing for the same effect as compound chocolate. Compound chocolate is typically used in situations where you want to make like candy bars or chocolate bowls for ice cream and things like that. (Sorry I also watch Ann Reardon's channel 'how to cook that 😆)

  • I don't get how people are still confused and also why Christine didn't understand because Ben explained it perfectly, but I'll try to explain it again There is no actual such thing as physical holo, it's just a light illusion, therefore holo cannot actually transfer. The holo paper is essentially working in the same way as a prism. The microscopic texture refracts the light, causing the surface to appear holo. The hardened chocolate is the same texture as the holo paper, so it can then refract the light like the holo paper does, or like a prism can to create a rainbow effect. The chocolate is still just chocolate before and after the process of hardening the cholate, the texture has just been modified.

  • Nerd Alert: For anyone who really wants to know, this is called structural color effect and a common example in nature is the Morpho butterfly. Instead of using colored chemicals, creating microscopic structures on the surface can split the incoming white light into reflecting light with various wavelengths/colors. Material science at its finest. Love the video and I so want to make it now for my friends.
